CLASSIC IRISH SODA BREAD4 cups flour 4 tsp. Baking powder 1 cup sugar ½ tsp. Salt 1 tsp. Caraway seeds 1½ cups raisins 2 eggs, beaten 1 cup butter or margarine, 1 cup milk melted Preheat oven to 350. Lightly grease loaf pan and set aside. Place raisins and caraway seeds in a large bowl. Sift together flour, baking soda, sugar and salt. Pour sifted mixture over raisins. Add butter, eggs, and milk to the bowl and mix well. Place dough on floured surface and mold into a round loaf. Place the loaf into the greased pan and bake for one hour. Test the loaf with a toothpick before removing from oven. Serve at one or let cool and serve toasted. |
