ENVY GREEN BRUSSELS SPROUTS2 lbs brussel sprouts 1 cup chopped tomatoes 1 Tbsp olive oil 2 Tbsp balsamic vinegar Salt & Pepper Trim off & discard stem ends for sprouts; rinse. In a frying pan, combine olive oil & ¾ cup water; bring to boil over high heat. Add sprouts, cover, reduce heat & stir occasionally until sprouts are tender. (8-14 min) Uncover & stir in tomatoes & vinegar. Add salt & pepper to taste. Serves 8 |
