YORKSHIRE PUDDING

Several hours before you plan to serve, make the batter:  Pour 1 cup milk into your blender, start blender at medium speed, break in 1 egg for a minute or so, then break in another egg and ½ tsp. Salt.  Now take 1 cup sifted flour and while the blender is still whizzing, add it teaspoon by teaspoon.  Run blender up a minute or two.  Put the whizzed up ingredients, still in the blender into the fridge.  Just before serving time, put a Tbsp. Of roast drippings or oil in a baking dish about 8x6x1½ “.  Place dish in over while heating oven to 400 & when oil is nice & hot, give the batter a final whirl in the blender & pour into hot oil.  Within 20 minutes, it should look like Mr. Everest. (if the edges get very dark brown before then, turn heat down immediately).  Turn oven down to 300 and let pudding dry out for 5 or 10 minutes.
